Charoset

A Passover classic! This version is based on Leah Koenig’s recipe for Ashkenazi charoset in The Jewish Cookbook (2019). Among other alterations, we added dates, which is more in line with Sephardic tradition.

Recipe

4 apples (about 750g)
1 cup walnuts (90g)
1 cup dates, chopped (175g)
1 Tbsp cinnamon
2 Tbsp fresh-squeezed orange juice
2 Tbsp honey
1/4 cup red wine

Stir all ingredients together.

Allow flavors to blend for at least one hour. You can prepare this a day ahead with no trouble.

Notes

The quantities here yield a lot of charoset, and could probably work for a Seder for 12, at least.
