Jenn invented this after eating goat cheese pasta at Tre Otto.
2 cloves garlic, chopped
1/2 onion, chopped
olive oil
large (28 oz.) can crushed tomatoes
1/2 tsp. salt
1/4 - 1/2 tsp. red pepper flakes
4 oz. goat cheese
handful grated Parmesan
fresh basil, chopped
Cook garlic and onions in oil over medium low heat, for about 10 minutes.
Add tomatoes, salt, red pepper flakes, and simmer 10-15 minutes.
Stir in cheese and basil, remove from heat, and serve.
This works well with tortellini. We’ve had success mixing in 1/2-1 lb. of sausage, serving with goat cheese or parm on top, and adding sauteed peas. It’s pretty versatile.
