Guacamole

Recipe

1 large ripe avocado
1/2 small onion, minced
1 small garlic clove, minced very fine
1/4 teaspoon of salt, or more to taste
juice from half a lime
1/2 teaspoon ground cumin
1 large or 2 small tomatoes, chopped
3 tablespoons chopped fresh cilantro

Mash the salt and garlic together. If you have a molcajete, do it in there; if not, mash it on a plate and transfer to a medium bowl. Add the lime juice and mash it all up some more. Halve and pit the avocado and scoop it into the bowl or molcajete. Mash it up a bit with a fork, but don’t overdo it. Mix in the onion, cumin, and cilantro. Adjust seasoning to taste, then mix in the tomatoes last. Serve immediately.

Notes

Everyone has different taste in guacamole, but this recipe is our absolute favorite. The cumin and cilantro are a must, as is the tomato.

Goes really well with veggie fajitas.
