Notes on Pizza Toppings
This is not a recipe, per se, rather a list of good pizza toppings and experience reports.
- Artichokes
- Canned artichoke hearts are fine. No precooking necessary.
- Basil
- Makes a great topping, but very likely to burn. Place shredded or whole leaves on top of pizza immediately after removing from oven.
- Caramelized Onions
- Cook with vermouth. Good with chard and oil with garlic and red pepper flakes in place of tomato sauce.
- Eggplant
- Chinese eggplant works well. Saute in olive oil, spraying with more oil occasionally to keep it from burning. Very delicious with pesto and fresh mozzarella. (This eggplant is also great with ravioli and pesto.)
- Mushrooms
- Precook by sauteing on the stove with kosher salt, olive oil and, optionally, rosemary. Sprinkle pizza with with truffle oil for extra mushroom flavor.
- Zucchini
- Prepare similar to the eggplant.
